Frozen mixed vegetables, thawed          1 ½ cups
Flour                                                        2 Tbsp
Low-calorie margarine                             1 Tbsp
Fat-free milk                                                ¼ cup
Parmesan cheese                                    1 Tbsp
Hot mash potatoes (instant or leftover)    1 cup
Paprika                                                     1 dash









Preparation Instructions

Heat oven to 350 degrees F.  Mix vegetables and flour in a small nonstick casserole dish (or spray dish with nonstick cooking spray).
Melt margarine in a small saucepan and add milk and cheese.  Pour hot liquid over vegetables.  Top with mashed potatoes, spreading evenly.  Sprinkle with paprika.

Bake 25-30 minutes or until potatoes slightly brown.
